Caramel Apple Craving

Happy Caramel Apple Day!

This comes at the perfect time since I was craving and oh-so-tempted to get a caramel apple last night when I was at the fair (round 2, I managed to only eat a corn dog!)  They just look so yummy and seasonal.

Luckily I woke up this morning to an inspiring e-mail from Hungry Girl providing a great alternative to the high cal. apples that were calling my name at the fair.  She provides two recipes, one for caramel apple pancakes and one for a deconstructed candy apple (lets be honest they ARE one of the most awkward foods to try to eat!)  Personally, I hope to try the deconstructed version ASAP! Thinking about switching out coconut for cinnamon.....

Deconstructed Caramel-icious Candy Apple
Ingredients:
1 apple (preferably Fuji), cored and thinly sliced
1 tbsp. fat-free or light caramel dip (like the kinds by Marzetti), room temperature
1 1/2 tsp. crushed dry-roasted peanuts
1 tsp. mini semi-sweet chocolate chips
1 tsp. shredded sweetened coconut

Directions:
Put apple slices in a bowl. Drizzle with caramel dip. Evenly sprinkle with remaining ingredients. Dig in!
